TRIPE SOUP
Sopa de Mondongo is a hearty traditional soup of Latin America and the Caribbean. It is made from slow-cooked diced tripe (intestines and stomach of a cow), and vegetables.

Ingredients:
3 pounds of tripe, well cleaned and cut into pieces
1 pound pigs hooves for flavor
1 pataste
2 ripe plantains
2 large carrots
2 large potatoes
1 small cabbage
4 cloves
1 small squash
2 tablespoons soy sauce
1 bunch of cilantro
1 teaspoon of spices
1 pepper + 1/2 onion + 3 cloves of garlic, liquefied
Preparation:
1) Cook the tripe along with the pig hoof, salt, pepper, onion and garlic until soft.
2) Add the vegetables (pataste, carrots, potatoes, cabbage) cut in small pieces. Continuing cooking until softened.
3) Add the cloves and spices.
4) Add the plantain. When the plantain is soft, turn off the stove and add the cilantro.
5) Serve. |
