ENCHILADAS
A Honduran enchilada is not like the typical Mexican enchilada that most people are familar with. Honduran enchiladas are made with 2 crisp corn tortillas and are similar to Mexican tostadas. The crispy corn tortilla is slathered with refried beans, then layered with toppings.

Ingredients:
10 tortillas
Refried beans
1 cabbage
1 lb of ground meat (beef or pork)
1 large onion
1 green pepper
3 to 4 cooked eggs
Shredded cheese
Preparation:
Fry the tortillas in very hot oil until crisp. Prepare the meat with onion, pepper, salt, and spices to taste. Cook over a slow flame until done. Cut the cabbage and eggs into small pieces. If desired, you can prepare the cabbage in the traditional pickled method (see recipe for encurtido). Take one fried tortilla and spread on a layer of beans. Cover with a second tortilla. Place the meat, cabbage, egg and cheese on top of the second tortilla and serve hot! |
