CATRACHAS

Catrachas (the slang name for Hondurans) is a popular snack. Catrachas are simple to make, and delicious!

Ingredients:

12 small corn tortillas
½ pound of hard salty cheese (grated)
1 pound of vegetable oil
1 red jalapeño pepper
ground black pepper
salt
2 cups of refried beans 
1 stick of margarine
1 purple or red onion

Preparation

Chop up 1/2 of the onion and the jalepeño pepper. Saute in margarine on a low to medium flame.. Add the beans and fry until the mixture slides easily in the pan.  Add salt to taste.  In a separate pan, heat the pound of oil.  Dampen the tortillas with water and sprinkle with salt and pepper to taste.   Fry the tortillas one by one in the oil, so they do not stick to each other.  Remove the tortillas and soak up excess oil with a paper towel.  Spread three spoonsful of beans on each tortilla and dust with grated cheese.
