TOTOPOSTES

This toasted and salted snack is a tradition in Honduras. The cooking of totopostes is a craft that has been passed down from generation to generation.
Ingredients:
1/2 pound of corn
Salt to taste
1/2 pound of margarine or lard
Brown sugar
Preparation: Bring to the corn to a boil in salted water. Remove from heat when the kernels are soft. Cool for 2 hours. Wash the corn and grind with a stone or hand mill. After the corn is ground, mix in water slowly and form a dough. Add in the lard or margarine and salt to taste. Form into small balls. Heat the oven and place the balls on cooking pans. Cook for 15 to 25 minutes. Remove from oven and let chill for 5 minutes. Serve with coffee.
